Origin: Grown in the Huehuetenango department of Guatemala, near the Guatemala-Mexico border by a large collective of family producers (many of whom identify as Maya) in the San Pedro Necta and La Libertad municipalities.

Description: The Ixlama is a beautiful example of a shade-grown, washed Guatemalan coffee. It is composed of 50% Bourbon and 50% Caturra varietals, and is meticulously processed by the Guatemalan exporter Transcafe at their Caserio Teogal Aldea San Martin mill. This coffee features a rich chocolate and brown sugar backbone, with dried cherry and raspberry notes to compliment. We love this coffee in all brewing methods, but feel it makes a particularly strong espresso offering. It has the rich notes most would expect from a staple espresso, with the fruit notes coming in to really make it a refreshing option. We roast this at a medium+ level to develop that richness while maintaining the delicious fruitiness.
